Kiwi Muffins


We have been scooping kiwis & eat them as they are. I never cooked anything using this sweet and sour important fruit. Since there were a bunch of them in the cooler, why not I make a difference, I thought... I googled for the recipe and found this...

KIWI MUFFINS

A
1 cup all-purpose flour (I used plain flour )
1/2 cup sugar
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground all-spice (Don't worry if u don't have it)
A dash of salt

B
1 large egg
1/2 cup milk
2 tbs butter, melted (margerine will be just fine)
2 kiwi fruits, peeled and chopped
1/2 cup of raisins, or less, chopped 

  1. Combine all ingredients in A. Put aside.
  2. Beat ingredients in B together until it blends well.
  3. Stir B into A and mix them well.
  4. Fold in raisins . Then only fold in kiwis.
  5. Fill the mixture up to 3/4 of the muffin cups.
  6. Pre-heat the oven at 220'C.
  7. Bake them approximately 15-20 minutes.
  8. Makes 18 cups, depending on the size of the cups you use.
My children were not fond of Kiwi Muffins... because they have that sourly taste....
